Pan-roasted tuna steak, with charred pak choi, tomatoes and crisp golden pommes frites, finished with a warm caper and rose-petal dressing.


This elegant yet simple supper takes just 18–20 minutes and pairs pan-cooked tuna steak with cherry tomatoes, capers and tender pak choi, finished with a delicate scattering of dried rose petals and parsley. Served with crisp pommes frites and a restrained spoonful of rock salt at the table, it is a colourful, lightly fragrant dish with just enough richness from the pan juices to bring everything together.


Ingredients Per Peson

  • Tuna Steak
  • 3 Cherry Tomatoes, halved
  • 2 Pak Choi leaves per person 
  • Drained capers, 1/2 tbsps.
  • Rose Petals (Dried)
  • Fresh Parsley, chopped
  • Pommes Frites (Can use frozen French Fries)
  • Olive oil
  • Ground Rock Salt, to serve

Steps

  • Preheat the oven for the pommes frites.
  • Wash and dry the pak choi. 
  • Spray a little olive oil to coat the pan.
  • When the oven is ready add the pommes frits and start warming the pan.
  • When the pan is up to heat, add the tuna steaks.
  • After a five minutes turn the tuna steak and add the halved tomatoes and capers
  • A minute later add the pak choi
  • Cook the tuna pan contents for another 10 minutes, turning occasionally, until cooked through. 
  • The pommes frites should be about ready now.
  • Lower the heat on the pan and sprinkle some rose petals over the fish and vegetables
  • Transfer the pan contents to a warm plate.
  • Add a tiny bit of olive oil to the pan and swish to absorb the flavours.
  • Sparingly drizzle a little of the pan juices over the tuna and vegetables, then add a little parsley.
  • Add the pommes frites to the plate and serve with a rock salt cellar and salt spoon.

Notes

  • The timings are based on the Pommes Frites taking around 18-20 minutes minutes, If you are using larger chips or an air fryer, they will take more or less time, so adjust your pan timings so they are all ready at the same time. 
  • Check the tuna steaks packaging for cooking instructions and times adjust the recipe times accordingly.
  • You can use shop bought French Fries for the Pommes Frites, just prepare to the makers instructions. 
  • Instead of pak choi, you can use other suitable leafy vegetables such as little gem lettuce, spinach or cabbage. 
  • You can use dried parsley in stead of fresh.
  • Capers can be salty, so save adding extra salt until it's served, if needed.
